This recipe offers a lean source of protein, a variety of colorful vegetables and fiber. It is quality rich, and satisfies a strong appetite.

Ingredients:
3 large Bell Peppers- green or for added color and taste you can use a variety of pepper colors (red, yellow, orange, green)
1-large sweet onion
2 Tablespoons -vegetable oil or Olive oil will add flavor to the vegetables
Cooking spray  
3-4 Boneless skinless chicken breasts
1 tsp Lawry’s seasoned salt
Sweet teriyaki sauce to use a marinade (my favorite is Korean Teriyaki Stir-Fry Sauce by House of Tsang)
6-8 Tortillas
(there are many great choices ranging from whole wheat, to low fat, flavored, and all sizes.) You can experiment with what you or your family would like based on your dietary goals. The whole wheat provides fiber. My children eat the smaller size and my husband and I eat the large size.
Low fat grated cheese (optional)

Instructions:

  • Clean, slice (medium pieces that will grill well) and use a ziplock bag marinade the chicken in the teriyaki sauce (this can be brief or overnight)
  • Chop the vegetables in long strips (this also can be done the night before if it makes serving easier)
  • Add oil to large frying pan and place the chopped vegetables in the pan and sprinkle Lawry’s seasoned sauce to taste.  Cook on medium heat until onions become translucent (cloudy)
  • Place the chicken on the grill or use broiling pan in the oven. Turn chicken at least once to ensure even cooking. Cook until done (about 15 minutes-depending on the size of the chicken).  Chicken should be white on the inside-not pink.
  • Once vegetables are cook, put them in a bowel
  • Utilizing the same frying pan spray with cooking spray (can use olive oil spray if desired) and warm up the tortillas flip them like a pancake to heat both sides.
  • Pull or cut the grilled chicken
  • Place the cooked vegetables and chicken in a line at the center of the tortilla
  • Sprinkle low fat cheddar cheese (Optional)
  • Fold the bottom up and wrap it like a swaddling baby

ENJOY with confidence and no guilt!

Add a side green salad with an olive oil based vinaigrette a few sprinkled nuts and tomatoes, a glass of low fat milk (children need extra calcium) and a yogurt parfait with fresh fruit for desert. This is a winning combination! Don’t forget to offer water at all times.
